Am I self-sabotaging or "trusting my gut"?

I’m very casually remaining on dating apps right now, and promised myself that so long as I click with someone and we seem compatible, I’d give them a chance. However, and I don’t know if it’s all the excess time I have alone with my thoughts, I find that I’m finding every single reason not to add someone on social media, give them my number, engage further in conversation, etc. I can tell that I’m being WAY more picky than I usually am, and I can’t tell if I’m “trusting my gut” or self-sabotaging and pre-maturely concluding a conversation that could’ve lead somewhere.

To give you an example, a guy I liked first on Hinge has been super dedicated to our conversation and after a week had suggested me move to texting off the app. For some reason, all I can think about now is, “well is it worth it? do I even think he’s cute? why am I not attracted to him anymore? wait maybe I am? he did kind of mansplain things to me? is he pretentious? oh god what am I getting into” and I absolutely hate it. Every little thing that could be an issue seems SO evident to me, but this is all happening before I’ve even gotten to know someone.

Please don’t tell me I’m being shallow or stupid, I know my thought process right now is horrible but I’m genuinely so confused as to why it’s taken this turn. Can anyone relate? How “picky” are you when dating, and does this count has intuition or am I self-sabotaging over small things?

EDIT: added some details
