How to proceed after "mixed feelings" first date?

Hi, so I will get right to the topic: I (34M) was introduced to this beautiful girl (30F), let's call her Lucy, by our common female friend. It was on purpose, my friend contacted me and suggested she would introduce me to her. I said yes and I didn't ask for any information or photos, I wanted to proceed as natural as possible and get all information about Lucy from Lucy.

Due to corona we met at my friends apartment where my friend lives with her boyfriend so it was like double date. So we had few drinks, talked a lot, got to know each other a bit, smiled at each other, etc. Later Lucy directly asked me to dance, so we danced a bit in close proximity. Then we had personal drunken converstaion where she asked me few times if I really like her, I had to say few times that yes and admitted I am totally into her. She mentioned she has low self esteem, but I assured her it is ok and we agreed we will meet after. So that was basically end, we didn't kiss, just touched, but I had overally good feeling due to that talk.

So few days ago we go on a date, this time just for coffee. We talked for almost 2 hours but she was sort of shy, I was not sure about the signals and was pretty sure this date won't end with a kiss. So I risked and asked her if I could just hold her hand. And she said "Sorry, but no". I was derailed, we walked to our cars and said goodbye. But she still mentioned the next date. She mentioned it even in the beginning.

So now I am totally unsure what to think and how to proceed. I like her, I would like her to be my girlfriend and I am in no rush. What would be the best approach? Keep it slow and leave the next initiative on her? Wait 3 days and ask for a second date?

PS: I am no dating expert, more on the introverted side and my 2 previous GFs were the ones who started the initiative on first dates.
