Needing a good first date idea. Would appreciate any help

So I asked a friend out on a date, and I have a week to come up with an idea of a date. I am wanting it to be something enjoyable, and a bit unique. So nothing like a normal picnic or playing video games. She is kind, athletic, plays video games, likes to do runs, and studies bio for college. I am not the most athletic, but she and I go on weekly hikes. Some of the ideas I had were going to the beach, go on a special and new hike, a virtual escape room, or something else. I would appreciate any ideas others may have or an idea of what you think would be for the best.
