What are some excuses to message someone you REALLY LIKE and not end up looking too random?

Let's say the person is… Less than a friend, more than just an acquaintance. So you don't talk on daily basis.

I like him a lot and would just love to grab a cup of coffee with him. I don't know if he's single. I don't want to make it awkward.

What are some reasons to message him out of the blue?

We just talk when we see each other randomly (but I cannot rely on that, I could not see him for weeks), he once gave me a ride home and he took care for me at the hospital a week ago but you know… That's his job and not really a conversation starter.
